Chaya’s Kitchen


Ecological food choices naturally coincide with ancestral diets. Our cooking features staple foods of the ancient Maya like corn, beans, squash, chili, chaya, taro, yucca, sweet potato, jicama, avocado, papaya, guava, cacao and tomato. We cook exclusively for our guests using local, and mostly organic ingredients. Dinner time promotes sharing of the say’s stories and travel tips among like minded people from diverse places.


Enjoy a breakfast* of free range local eggs, chaya (Maya superfood), banana pancakes, fresh tropical fruit and corn tortillas.

Beverages include fresh coffee, ginger or lemongrass tea, fresh hibiscus juice.

Genesis has acquired 250 acres for rehabilitation and wildlife habitat. We cultivate a small area for organic produce for Genesis. Let us know if you would like to explore the conservation area and farm. Visitors are welcome to join us on harvests of wild or farmed foods.
