Ecological food choices naturally coincide with ancestral diets. Our cooking features staple foods of the ancient Maya like corn, beans, squash, chili, chaya, taro, yucca, sweet potato, jicama, avocado, papaya, guava, cacao and tomato. We cook exclusively for our guests using local, and mostly organic ingredients. Dinner time promotes sharing of the day’s stories and travel tips among like minded people from diverse places.
